Summer desserts!

My dad is an amazing cook. He doesn't do it often but there are a few things that I love to ask him to make, especially for birthdays and holidays. One of my favorite things to request is his famous strawberry pie. This summer I asked him for the recipe and in the last 3 days I've made it twice! I made it for small group on Sunday and for a special dinner tonight. The picture to the left is from bettycrocker.com (it looks just like it) but the email/recipe below is from Al Smith!

It's wonderfully easy, every one loves it and it's the perfect light and cool summer dessert! Hope you enjoy!

Dad’s Awesome Strawberry Pie Recipe

This is per pie:
Ingredients:
1 container of strawberries (side not: Dad obscenely uses 2... it creates quite a mound but is very good!), Corn Starch, 1 Strawberry Jell-O Packet, Sugar, Pie Crust

Brown the deep dish pie shell in the oven at 350 degrees and set it aside.

Cut up your strawberries and place them aside. As big or small as you want.

Put a half a cup of sugar into a pot. Add 4 teaspoons of cornstarch and mix. Then add a cup and a half of water and cook while stirring at medium until it boils. Add the strawberry jello as a powder and stir thoroughly.

Place a little of the strawberry mixture and put into the bottom of the pie shell. Then add your strawberries.

Now add the strawberry jello mixture and let in go between the strawberries until the pie is filled and the jello mixture has filles all the gaps.

Let it sit for a few minutes and start to solidify. Then place it in the refrigerator to finish solidifying.

Add cool whip and pig out.
